    I watched people do this in Romani in a primitive way and the used more of indirect method where the fire is not directly under the meat and the smoke funnels through into a box holding the meat, After they would hang it 2-3 days outside when the weather is chilly between 40-55F . I never saw any flies attacking there meats at all since they were pretty much dry and and the weather was cold
