The pectin act as a gelling agent so you end up with jam rather than stewed fruit. By all means, if you want stewed fruit, you’re welcome to it.
mmm looks good, I … mmm looks good, I usually make freezer jam, it’s a little more lazy, you avoid the canning process, but there’s just nothing like a scoop of freezer jam on pancakes with a little heavy cream, mmmmm mmmm

Great job! I made … Great job! I made 42 jars of jam about 3 weeks ago. Peak strawberry season here in NC. Purchased 3 flats from an organic pesticide free farm. Made 18 jars of straight strawberry, 16 jars of strawberry pineapple and the rest strawberry rhubarb. I plan on making blueberry preserves soon, as the blueberry farms are now open and running. Then on to apricot, pineapple, plum, fig, apple butter, pear honey and more. AND don’t forget the pickles once the garden produces it’s bounty. Noreen
