My grandfather told me stories of his parents preserving meat the same way with lard here in Louisiana. He said it would last a long time. They would just get the meat out of the lard as they needed it. They grew nearly everything they ate. It was a hard life but it teaches to appreciate every meal.

Thank you for posting this video. We need to teach our children how to preserve meat, grow vegetables and raise animals (for food). It would be wonderful if your father would be willing to do a demonstration. Please; may I ask a few questions?
Do you have to slice the meat to a particular thickness? does the top and bottom of the barrel need to have a certain thickness of grease (is one inch of grease OK)? Do you boil the grease for a time to sterilize it? Again, thank you.

I love watching your videos. My husband and I were also born in Cuba and are proud U.S. citizens. Here is information that you might find interesting and important for safety purposes: My in-laws say pork meat cannot have bones or it will spoil. The most critical information is that a wooden utensil must be used to get the meat out of the lard. Metal cannot be used or a chemical reaction would occur that would spoil the meat. I look forward to more of your great videos. Your parents are great.

I’ve heard of this before. An elderly woman who was interviewed said that they kept meat in butter churns, etc., and that they would put some hot grease in the bottom of the churn and then put a layer of meat in, followed by more grease and meat layers. The hot grease disinfected and sealed the meat. They just dug into it for each meal. She did note that by the time they finally got to the bottom of the churn, the last bit might have gotten a bit rancid. Great method, nonetheless.
