Video 1 Making Jam and Infusing Fruit

You will learn how to make and home can jam and infuse fruit, in this first video of the series. The video podcasts are to be used with detailed instructions and recipes on CanningUSA.COM

If I Can, You Can! video podcasts are ten to twelve minute instructions for each canning method. The first being the easiest, beginning with jam and infused fruit, moving into the second which teaches how to preserve fruit in syrup and how to can homemade pie filling. The third teaches how to home can delicious, ripe and red summer tomatoes whole, diced or in your favorite tomato sauce! The fourth podcast shows how to can vegetables and soups and the fifth is about canning chili, stews and meat sauces. As an added bonus, we’ll finish off the series with podcast six, teaching how to can homemade pâtés, meatloaf and fish.

    Nope. Just eat them plain. Like he said, they are great for a small desert. I only take them out usually when i have company over. They are also good in cherry pies too. Use half regular cherries and the other half the infused cherries. MMMM delicious!

    a lot of peole reuse, I was a bit suprised by that too. In fact some people put labels on their gift jars that say “please return jar”.

    Where are you getting those jars and lids for the jam canning as shown in this video? I’ve wanted to use lids like that as opposed to the two piece. I’d prefer the more Smuckers jam style lids if you know what I mean. Could you send me a link to them please? I wasn’t sure if it’s the best bet when canning jam as I’ve read… but I trust you guys! :D

    1. put jars/lids in low oven to sterilise + warm through.
    2. put prepared fruit in pan withsome water+ lemon juice if needed+ simmer till fruit soft.
    3. Add sugar, stir without boiling till sugar is dissolved.
    4. Bring to rolling boil for required setting time.
    5. test a teaspoon of jam on cold plate and leave for a minute, push the blob with your finger, and if it has formed a skin that wrinkles up, its ready.
    6. Now simply ladle into warm jars + seal with the lids.

    Hello,
    Just canned my first jam and have some questions that i hope you or another expert on this forum can answer.
    1. what is the use of sterilizing jars before canning if one runs a non-sterile instrument along the sides to get rid of air bubbles?
    2. i suppose that processing jars in a canner cooks the contents further?
    3. is it okay to put newly processed jars straight into the fridge to cool?
    4. is the processing time shorter/head space larger if you’re using smaller jars?

    I have been canning for years and you can re-use your jars – i wash mine make sure they are free of nicks around the edge and then bleach in hot water rinse and air dry – hope this helps….
