RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

1/2 Cup of Lemon Juice
3/4 Cup of Caster Sugar (Fine White Sugar)
200g Butter (Unsalted)
3 Eggs (at Room Temperature)

MAKES 2 CUPS OF LEMON CURD

Preparation Time: 2 minutes
Cooking Time: 15 minutes

STORAGE:

Keep in an airtight container or sterilized jar. Store in the fridge, unopened, for up to 6 months – once opened, consume within 1 week.

TO MAKE MICROWAVE VERSION:

Place all ingredients in a microwave-safe bowl or jug. Cook on HIGH for about 6 minutes (depends on microwave) – stopping every minute to whisk mixture. Once mixture is smooth and thickened, place bowl in sink of cold water (as seen in video) and whisk until cool.

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

    @digit432 You need to keep stirring – the butter will float to the top, and then melt. That’s why you must keep stirring.

    Did you do the stovetop or microwave version?

    @flyerdude02 I’ve never done the mixture, but I have made Pineapple curd before and it comes out really well. It works best with sour fruits because of the sugar content, something like oranges would be cloyingly sweet due to the sweetness of the orange added to the sweetness of the sugar.

    @Farlachan You need to use citrus fruit for this recipe to work. The acid in the juice makes the whole this work. So it’s lemons, limes or maybe oranges – but Lemon works best :)
