Freezing Tomatoes

Freezing tomatoes is a great way to store tomatoes to use all winter long. Great in soups or stews, freezing tomatoes help stretch the summer a bit longer. In this easy recipe, Rita shows you how to freeze and use tomatoes from your garden.

    So you froze them, took the skins off and froze them again? I don’t refreeze them again. They’ll still be OK to eat like that but normally you don’t refreeze the tomatoes since they’ll be a texture change, etc. But like I said, they’re still OK/safe to eat.

    My aunt just chunks up tomatoes, skin and all and blends them up. She freezes them in containers that way and they’re ready to go in soups, stews, etc. ~Rita

    I know what you mean – in a perfect world, canned tomatoes to me are the best if you have time too do that. Re freezing: I’ve done both – blanch, skin & then freeze and also freeze w/o blanching & skinning like in the video. They taste the same to me.~Rita

    Hey Rita, I’ve watched your video and it looks like something I might try. I’m a big fan of growing, eating, canning, and sharing tomatoes. I put up more that 60 quarts a year but have never froze them. My mother would blanch, skin and freese her tomatoes but I’ve always heard that if the tomatoe drops below 50 degress that its flavor would turn off … forever. What say you.?

    Taking the skins off is personal preference. And yes you can use them for lots of other things. They taste best in cooked dishes. ~Rita

I was wondering, why do you have to take the skins off? is that just for people who don’t like the taste of the skins? I never take skins off tomatoes, I always use it all. Can you use these for other things? Like on tacos (thawed) or any other uses? thanks
